The style is not entirely Japanese, gyuto is a mix of European and Japanese. The Japanese culture has been rising to fame in recent years. What does gyuto mean – how did it emerge?
The Japanese term gyuto simply means “cow sword” as they were originally designed for slicing large pieces of red meat, and beef. Though it was designed to cut beef, it turned out to be a multipurpose knife that can slice, dice, and mince various foods like vegetables, fruits, meat, etc. The design emerged in the Meiji era of Japanese history. Japan has always been reserved for the influences of other cultures. Back in the day, the country was open to only a limited number of cultures and trades. It was not in Japanese etiquette to have meat on their menu. However, the influence of the west and the introduction of beef to the cuisine increased the popularity of western chef knives in the country. The first-ever gyuto knife was designed by the sword smiths of Sakura – a place in Japan.
Structure of the knife:
It looks similar to the common chef knife. The blade length usually ranges from 7 to 9.5 inches. gyuto knife is precisely known for its double bevel structure. It has a curvy tip on the top for rock cut and a flat towards the other edge for smooth movements and easy working. The handle is of western style, which provides an easy grip. The tool is primarily made of Damascus steel but a different variety of options are available in the market. However, what makes them different from common chef knives are slimmer profiles and tall heels. A typical chef knife has a blade of the length of 8 inches and a width of 3.8 centimeters. Gyuto blade has less width than a chef knife.
